Tomorrow is Meatless Monday!

I’m challenging you to participate in Meatless Monday this week. Going veg isn’t as difficult as you might have heard, especially just for one day. If you are vegetarian, try going vegan for the day. I want to see photos of your meatless meals. You can tweet them to me @kellycrochets, or post them on my Facebook page.

How I Spent My Summer Vacation…

So, a few months ago, I disappeared. Without any warning. I’m back, and I’m ready to start blogging again. I’m going to start off slow, this is going to be a photo heavy post.


I’ve been spending the last two months in a tent. Next to a creek. Working in a camp kitchen. (It’s just as meaty as it sounds, but, thankfully, I got to make lots of yummy vegan food, and decorate some really fun cakes.)

I didn’t just spend my summer decorating cakes. There were campfires:



There was hiking:



There were bugs (no pictures of those), and there was even a trip or two to Yosemite:



It was a good summer. I’ll be back tomorrow with a really awesome recipe for some mouth-watering cobbler I made at camp.

Seitan Coconut Soup

I’ve been craving soup. Normally, this time of year, I’m craving nothing but fresh fruit. However, it has been a cold, windy, rainy (sometimes snowy) May and June. I’ve had my eye on this Chicken Coconut Soup from Clean Eating Magazine since it was posted in March.

The recipe was easy enough to veganize. Vegetable broth instead of chicken broth, So Delicious brand coconut milk instead of skim milk, seitan instead of chicken. I made the soup creamier than the recipe called for.


2 tsp canola or extra-virgin olive oil

1 minced clove of garlic (I used my garlic press)

1/2 white onion, chopped

1 cup chopped potatoes

1/2 Cup vegetable stock

1 1/2 cup light coconut milk

1/2 cup So Delicious Coconut Milk (or hemp milk, or soy milk, or almond milk, whatever)

8oz seitan (I just used a box of Westsoy Seitan Strips)

1 cup snow peas

1 tsp red chili pepper flakes

1 tsp fresh lemon juice

Heat oil in a pot over medium. Add garlic, onion, and potatoes. Saute until onions start to turn translucent.

Add liquids and seitan. Let simmer for around 10 minutes

Add peas and chili flakes to soup. Simmer for 2 to 3 minutes.

Mix in lemon juice. Serve.

I have been eating lots of chia pudding, roasted root veggies, and soup. I’m starting to crave late-spring and summer fruits. I dreamt of watermelon last night.

I am in the process of making many pink and white scarves to sell to raise money for my Avon Two Day Walk. I have 3.5 completed, and keep meaning to take pictures, but I also keep leaving my camera in the car, so soon – possibly tomorrow – I will have new scarf photos on kellycrochets
