Grilled Veggies and Vegan Corn Casserole
Not much of a recipe tonight, but the marinade for the veggies is one of my favourites.
The casserole was posted on Vegansaurus last month, called and I’ve been putting off making it until I could get to Whole Foods for vegan sour cream. I didn’t have Daiya cheddar, so I used Daiya mozzarella. I also didn’t have cornbread mix. I’ve never used it before, so I actually don’t know what’s in it, I assume its just the dry ingredients for corn bread? That’s what I used, and I think that might be why my casserole didn’t turn out as creamy as the one in the Vegansaurus picture.
I got the recipe for the veggie marinade from a girl I worked with years ago. Its really easy, and I don’t measure, everything is to taste.
That’s it. Whisk it all together and throw your veggies in it. Tonight, I grilled bell pepper, jalapeño, and eggplant.
