>Vegan MoFo Day Five: Making Candy is Hard
>Okay, maybe it isn’t that hard, maybe my candy thermometer is inaccurate. I made toffee today, and its totally burned.
It didn’t look burned and it didn’t smell burned, but, now that it has set up, it tastes burned. I’m going to give you the recipe anyway, maybe you can do something fabulous with it. (My Gramma certainly does)
Aunt Kay’s English Toffee:
2C white sugar
2/3C brown sugar
2C butter (I used EB)
1tsp baking soda
6oz chocolate chips (I used Ghiradelli)
2C chopped, toasted almonds (divided)
Grease a cookie sheet with shortening and sprinkle with half the almonds.
Bring sugars, butter, and water to a boil, stirring constantly. Cook to 300 degrees (F) — 290 for a “softer” toffee. this should take about 20 minutes.
Remove from heat and quickly stir in baking soda. Pour onto already prepared cookie sheet and spread.
Wait 5 minutes, then sprinkle chocolate chips on top. Wait a few more minutes and spread the, now melted, chocolate over the top. Sprinkle with remaining almonds. Let set. Enjoy
