>Pudding! For Breakfast!

>As I’ve been perusing a few of my favourite recipe sites and foodie blogs over the last few weeks, I’ve seen a number of recipes for chia pudding.

Yes, ch-ch-ch-chia.
These little seeds truly pack a powerful nutritional punch.Check out the great article on them on the Living Foods website.
Okay – my pudding. Last night, I put about three tablespoons of chia seeds into a soup bowl. I then filled about 1/3 of the bowl with the walnut milk I made yesterday. Stirred it and let it sit overnight. At this point, I pulled some fresh-frozen boysenberries out of the freezer to thaw overnight.
This morning, the milk was no longer liquid. The chia seeds had formed a gel with the milk and I had pudding. I mixed in a little agave and the boysenberries.
I have a ton of energy today and I’m still full (satisfied, not stuffed). Usually by now, I’m ready for a snack, but I have absolutely no desire to eat the one I’ve prepared.
Next time I make this pudding, I will add dried cherries and cinnamon. I can’t wait.
